One of the many things I love about food is the fact that it’s a universal communicator of offering, safety, love, and gratitude.
Since the dawn of time, even cave dwellers traded food as gifts or to display care for one another.
Food brings families and friends together. It sends a message. It fills us up.
And best of all?
It's a 💣 to eat (my slang for its fun to eat). 😋
It’s funny because I wasn’t always a foodie. Up until I was about 10 years old, all I ever consumed was smooth peanut butter and grape jelly sandwiches with a small box carton of my favourite Hershey’s chocolate milk. Delicious! But pure sugar. And ALWAYS the same damn thing.
As I aged, I found that my dinners became predictable and bland when ordering from the kid’s menu at a restaurant, so I finally decided to branch out and order something different and try the adult menu. I found that the more combinations and flavours I consumed, the more interested I became in the wide world of food and cooking.
Having travelled to Europe twice now, eating foods in different countries has become one of my favourite parts of travel all together! And now being vegan and doing the same, I love seeing how creative all regions can get in whipping up some impressively tasty (and sometimes traditional) vegan food creations.
But why wait to travel to try some of these creative alternatives?
The following is a list of vegan weeknight dinners created by top Instagram influencers from around the world! So, sit back, read up, and get ready to try things you might otherwise never would!
HOW TO BE A WEEKNIGHT VEGAN DINNER PROFESSIONAL
Real quick. But the truth. We all need it.
We’re all busy.
But that doesn’t mean we are limited to relying on fast food, and corn snacks we’re convinced are meals for the sake of time! NO!
Our bodies need nourishment! Fibre! Protein! Phytonutrients and love!
Haha, so didn't mean to preach that, but it’s a subject I am passionate about.
I used to be a master meal prepper. I’ve gotten a little loose about it more recently and haven’t been as on the ball (my bad!), But I aim to make conscious steps towards changing that every day!
And if you’re making efforts to be fit on top of being busy as well (@me ESPECIALLY when I was half marathon training), this is especially convenient. While at my fitness peak (just last year actually), I prepped all my week’s meals (breakfast, lunch, and dinner) including snacks. I would prep smoothie jars in the freezer as well and throw that into a blender with some water, protein powder, and nut butter of choice and, I kid you not, gained 12 pounds from a purely vegan diet for my half marathon a year ago. Having been a full-time student with a part-time job at the same time, being a meal prep master was essential to making this possible.
With that being said, a lot of these internationally inspired recipes featured below could use some tender love and meal prepping. Especially for chopping, mincing, etc. That way, when you get down to it after a long day of working, exercising, and/or possibly taking care of children, pets, etc.
Cooking up these meals will be super simple and easy to do.
Which is IDEAL. Right?
But of course, all the power to you because many people do find cooking after a long day to be quite the cathartic experience.

I wouldn’t add vegan cheese directly to this dish because the chickpea curry does not call for a heavy dairy-like ingredient. Cashews take care of the creaminess here. However, if you do decide to have a side of naan (which you can either buy at the store or make homemade...My absolute fave btw. Gluten-free alternatives like using the socca dough linked in the recipe above work well too!)
